Western Meatloaf and Savoury Roasted Carrots
Try out this recipe in your Roaming Cooking containers, or you can make this in any smaller sized conventional baking pans or casserole dishes as well. This meatloaf recipe will fit into an 8 inch x 5 inch (20 cm x 13 cm) baking pan.

Western Meatloaf
  1. Saute your celery, green onion, bell pepper and garlic in frying pan with vegetable oil. Set aside to cool.
  2. Preheat your oven to 350 F (or 175 C).
  3. In a large bowl, combine ground beef with the other ingredients, starting with the wet ingredients first. Mix all the ingredients together well, adding the sauteed vegetables last.
  4. Press into the large 700 ml (23 fl oz.) Roaming Cooking silicone container.
Savoury Roasted Carrots
  1. Peel and slice enough carrots to fill the smaller 300ml (10 fl oz.) Roaming Cooking silicone container.
  2. Melt your butter, then add the olive oil and other ingredients to it. Pour over the carrots and stir until coated.
  3. Place your two Roaming Cooking containers, one with the meatloaf the other with carrots, with the lids off, into a 350F degree oven (175C) and bake for one hour or until the meatloaf reaches an internal temperature of at least 160F degrees (or 71C).

COOKING TIPS: For this recipe…

I used extra lean ground beef because this recipe calls for cheddar cheese. The cheese ups the fat content, which balances out the lack of fat in the extra lean ground beef. This produces a nice moist meatloaf.

No fresh garlic? Substitute 1 tsp garlic powder, adding it to the meatloaf at the same time as your salt and pepper

No Herbs de Provence? Substitute 1 tsp, basil or 1/2 tsp oregano

SERVING TIPS:

If you want to keep things simple, do some baked potatoes in tin foil in the oven at the same time.
Or if you prefer, you can make some mashed potatoes on the stovetop while you wait for your meatloaf and carrots to cook.

Need more greens? You can always steam, saute or boil some broccoli or green beans to add as an extra side to make this a complete nutritionally balanced meal.
